Nose: delicate and elegant, aromas of mint, sage and white peach; followed by sensations of white chocolate and citrus fruits: a marked mineral component gradually appears in the wine

and dry, with a definite floral characteristic, it shows flavours reminiscent of mint

Vinification and ageing: grapes are submitted to a soft pressing of whole bunches to obtain the free-run must, under carefully monitored temperature and using selected native yeasts. The vinification and the ageing on the fine lees for 6 months takes place entirely in stainless steel tanks. Before being bottled, the wine is lightly filtered and kept at cellar temperature until considered ready to be marketed
Colour: Straw yellow with golden hues
Nose: aromas of yellow peach and apricot, flint and orange flower with hues of the Mediterranean Scrub; it opens with aromatic notes of lime and lemon
Palate: a fresh and savoury wine with refreshing notes of citrus fruits, persisting and leaving delicious hues of almond, eucalyptus and lemon zest
Recommended pairings: pair with fish like salmon, seafood but also with fresh cheeses and white meat. It’s perfect as aperitif or for the appetisers

Vinification and ageing: in steel tanks, fermentative maceration for a week on the skins, and daily pumping overs of must.
Ageing and refinement: after racking, 50% of the wine ages in French oak barrels for about 10 months (second and third passage) while the remaining 50% ages on the fine lees in steel for the same period. Temperature of fermentation: 25°- 27°C
Bottling period: first week of July following the harvest
Colour: Ruby red with a purple hue
Nose: explosive aromas of cocoa, tobacco and fresh fruit; Mulberry, plums and slightly mentholated balsamic notes emerge.
Palate: Firm acids and smooth tannins with a long finish, this wine is delicious on its own or pair with meat barbecue
Recommended pairings: ideal for barbecue, pair with sausages, grilled meat and fresh pasta with mushrooms

Soil: Calcareous clay on a yellow marl base
Vintage period: first decade of November
Vinification and ageing: in steel tanks, with daily punching down and pumping over and maceration of the skins from 10 to 20 days depending on the trend of the vintage
Ageing and refinement: in oak barrels for about 24 months and in bottles for another 12 months. Temperature of fermentation: 27°- 29°C
Colour: Intense ruby red with garnet hues
Nose: Elegant and fine nose of red fruit such as mulberry and blackberry. Sensations of myrtle and cinchona perfectly merge with aromas of bitter cocoa, tobacco and a refreshing menthol note. The wood is perfectly integrated.
Palate: The tannic softness and freshness are the stylistic features of the wine that make it suitable for very long ageing.
Recommended pairings: ideal for cured meat and wild game, pair with veal, lamb and pork
